Asian Red Cabbage Salad with Peanuts

Ingredients:

  • 2 tablespoons unsalted creamy peanut butter
  • 1 tbsp hot mustard
  • 1 tbsp dark sesame oil
  • 1 tbsp soy sauce
  • 2 tsp peeled and grated fresh ginger
  • 2 tsp. honey or agave nectar
  • Juice of 1 lime (about 2 tbsp)
  • 6 cups thinly shredded red cabbage (about half a medium head)
  • 1/4 cup thinly sliced ​​fresh basil
  • 2 tbsp fresh cilantro, chopped
  • 3 green onions, thinly sliced ​​diagonally
  • 2-3 tbsp roasted unsalted peanuts, chopped

Preparation:

  1. In a large bowl, combine the peanut butter, mustard, sesame oil, soy sauce, ginger, honey, and lime juice. Add the cabbage, basil, cilantro, and green onions and toss to coat.
  2. Transfer to a serving platter, sprinkle with chopped peanuts and serve immediately.
