Almost Famous Breadsticks

Ingredients:

    Dough

  • 1 packet of active dry yeast
  • 4 and 1/4 cups of premium flour, plus extra for work
  • 2 tbsp (30 g) butter, softened
  • 2 tablespoons of sugar
  • 1 tbsp fine salt

    Topping

  • 3 tbsp (45 g) butter, melted
  • 0.5 tsp coarse salt
  • 1/8 - 1/4 tsp garlic powder
  • A pinch of dried oregano

Preparation:

  1. Knead the doughTo make the dough: Pour 1/4 cup warm water into the bowl of a stand mixer; sprinkle the yeast on top of the water and let it stand until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt, and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  2. Then turn the dough out onto a floured work surface and continue kneading with your hands until smooth and soft, about 3 minutes. Roll the dough into a 24-inch-long log; cut it into 16 1/2-inch-long pieces. Lightly knead each piece and form them into 7-inch-long breadsticks; place them 2 inches apart on a parchment-lined baking sheet. Cover with a kitchen towel and let rise in a warm place until the breadsticks have doubled in size, about 45 minutes.
  3. Preheat oven to 200°C.
  4. Prepare the toppingTo make the breadsticks: Brush the breadsticks with 1.5 tablespoons (75 g) of butter and sprinkle with 1/4 teaspoon of coarse salt. Bake until golden brown, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon of salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1.5 tablespoons of melted butter and sprinkle with seasoned salt.
