Pina Colada-flavored granita

Ingredients:

  • 3 cups diced pineapple
  • 1 cup coconut water
  • 1/4 cup coconut cream

Preparation:

  1. Combine the pineapple, coconut water, coconut cream, and a pinch of salt in a blender and blend until smooth. Strain through a fine-mesh sieve into an 8-inch (20 cm) square stainless steel or glass baking dish.
  2. Freeze until ice crystals begin to form around the edges, about 45 minutes. Using a fork, scrape the frozen portion toward the center of the pan. Continue freezing, scraping every 30 minutes, until completely frozen, about 4 hours.
