Ingredients:
- 1 cup fresh strawberries
- 2 tbsp. sugar, or more (to taste)
- Half a vanilla bean, cut in half lengthwise and scrape out the seeds
- 1 teaspoon freshly squeezed lemon juice
- 1 bottle of 750 ml pink champagne
Preparation:
- Combine the strawberries and sugar in a bowl and let sit for 15 minutes. Then mash with a fork or potato masher until you have a chunky puree. Add the vanilla bean, seeds, and lemon juice. Cover and refrigerate for 1 hour or up to 4 hours. Remove the bean before serving.
- Place 4 champagne flutes in the freezer for at least 15 minutes before serving. Remove them from the freezer and add 1-2 tablespoons of strawberry puree and liquid to each. Fill the flutes to the brim with champagne.
