A burger just like the one at Smashburger

Ingredients:

  • 1/4 cup mayonnaise
  • 4 tsp. yellow mustard
  • 12 slices of pickled cucumbers + 1 teaspoon of brine
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • A pinch of smoked paprika
  • 0.6 kg ground beef (20% fat)
  • Unsalted butter for greasing
  • 4 hamburger buns, cut in half horizontally
  • 4 slices of cheese
  • Ketchup, for assembly
  • 8 thin slices of tomatoes
  • 4 thin slices red onion
  • 4 lettuce leaves

Preparation:

  1. Heat a griddle or large cast-iron skillet over medium heat for 10 minutes. Meanwhile, in a small bowl, combine the mayonnaise, mustard, and brine. In a separate small bowl, combine the onion powder, garlic powder, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Form the ground beef into 4 balls. Lightly grease a skillet with butter and toast the buns, cut-side down, in batches until golden brown, 1-2 minutes. Transfer to a plate.
  3. Grease the skillet again with butter and add 1 beef patty. Press firmly with two large, crossed metal spatulas for exactly 10 seconds, then carefully lift the spatulas. Sprinkle the patty with a small amount of the spice mixture and continue frying, without turning, until well-browned, 1.5 to 2 minutes. At this point, begin frying the next patty.
  4. Flip the patty, sprinkle with spices, and top with a slice of cheese. Continue cooking until the cheese melts around the edges and the patty is golden brown on the bottom, about 1 more minute. Repeat with the remaining ground meat.
  5. Spread mayonnaise sauce and ketchup on the buns. Top with patties, then pickles, tomatoes, red onion, and lettuce.
