Coconut-citrus sparkling water

Ingredients:

  • 1 can (340 g) frozen orange-pineapple juice concentrate, thawed
  • 1 cup coconut water
  • 3 thin slices of ginger
  • 0.5 tsp coconut extract
  • 1 cup of sparkling water
  • 2-4 tablespoons syrup

Preparation:

  1. In a medium skillet, combine 12 ounces (340 g) of orange-pineapple juice concentrate, 1 cup (1 cup) of coconut water, and 3 thin slices of ginger; simmer over medium-high heat until syrupy, about 20 minutes. Stir in 1/2 teaspoon (0.5 ml) of coconut extract; let cool. Add sparkling water.
  2. For each serving, mix 2-4 tablespoons of syrup with 1 glass of cold sparkling water in a glass with ice.
