Ingredients:
- 340 g multigrain spaghetti
- 3 tablespoons red wine vinegar
- 2 tablespoons plain low-fat yogurt
- 2 teaspoons Dijon mustard
- 2 green onions, thinly sliced
- 1 tbsp chopped fresh dill (optional)
- 3 tablespoons extra-virgin olive oil
- 1 green bell pepper, thinly sliced
- 60 g thin slices of ham, cut into strips
- 60 g cheddar, cut into strips
- Half a small head of romaine lettuce, thinly sliced
Preparation:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and rinse the pasta under cold water to cool completely.
- In a large bowl, combine vinegar, yogurt, mustard, green onions, dill, 1/2 teaspoon salt, and black pepper to taste. Drizzle with olive oil and whisk thoroughly. Add spaghetti, bell peppers, ham, cheese, and romaine lettuce; toss to combine.
