Burgers with green tomato salsa

Ingredients:

  • 0.7 kg lean ground beef
  • 2 green tomatoes, diced
  • Juice of 2 limes
  • 1 tbsp. sugar
  • 0.5 cup chopped fresh cilantro
  • Half a small red onion, diced
  • 1 red jalapeño, seeded and finely chopped
  • 4 ears of corn, shelled and broken in half
  • 2 tsp vegetable oil, plus extra for grilling
  • 4 sesame hamburger buns
  • 0.5 cups of prepared guacamole

Preparation:

  1. Preheat the grill to medium-high heat. Make the salsa. Combine the tomatoes, lime juice, sugar, and 1 teaspoon of salt in a small microwave-safe bowl. Microwave for 2 minutes, then add the cilantro, red onion, and jalapeño.
  2. In a large bowl, toss the corn with vegetable oil; season with salt and pepper. Form the ground beef into four 1-inch-thick patties; season with salt and pepper. Lightly coat the grill grate with vegetable oil. Grill the corn, turning occasionally, until tender and charred, about 8 minutes.
  3. Meanwhile, grill the patties for about 4 minutes per side for medium-rare. Toast the buns on the grill.
  4. Place the patties on buns and top with guacamole and salsa. Serve with corn.
