Mashed potatoes with red cabbage

Preparation:

Place 1 pound of diced red potatoes and 3 cups of shredded red cabbage in a saucepan, cover with water, season with salt, and bring to a boil. Cook until tender, about 35 minutes. Set aside 1/4 cup of the water and discard the rest. Mash the vegetables, adding 2 tablespoons of butter and adding more of the cooking water if needed. Season with salt and pepper to taste.
