Apple-glazed chicken wings with apple salad topcook.tomathouse.com
Ingredients:
- 1 tbsp extra-virgin olive oil + extra for baking sheets
- 1.1 kg chicken wings, cut in half
- 1 tbsp hot smoked paprika
- 1 cup apple cider (unfiltered apple juice)
- 1/3 cup + 2 tsp apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon chilled unsalted butter, cut into pieces
- 2 small apples (1 red, 1 green), thinly sliced
- 4 stalks celery, thinly sliced + 1/2 cup celery leaves
- 3 green onions, thinly sliced
Preparation:
- Grease two baking sheets with olive oil, place them in the upper and lower thirds of the oven, and preheat the oven to 450°F (230°C). In a large bowl, toss the wings with the paprika, 1/2 teaspoon of salt, and a small amount of freshly ground black pepper. Arrange the wings on the preheated baking sheets; use tongs to evenly space them out. Bake, rotating the baking sheets halfway through, until the wings are crisp and golden, about 30 minutes.
- Meanwhile, in a small saucepan, combine the apple cider, 1/3 cup vinegar, and Worcestershire sauce. Bring to a boil over high heat, then reduce heat to medium and simmer until reduced to 1/2 cup, about 12 minutes. Stir in the butter.
- When the wings are done, combine them all on a baking sheet and broil. Brush the wings with about ¼ of the applesauce and broil until glazed, 1-2 minutes. Flip and broil for another minute. Transfer the wings to a large bowl and toss with the remaining sauce.
- In a bowl, combine the apples, celery (stalks and leaves), half the green onions, olive oil, and the remaining 2 teaspoons vinegar; season with salt and pepper to taste. Divide the salad and wings among plates; garnish with the remaining green onions.
