Bread pudding with apples and chocolate chips

Ingredients:

  • 1 loaf (450g) cinnamon raisin bread, sliced ​​and then cut into 4cm pieces.
  • 2 tbsp butter, cut into small pieces, plus extra for greasing the pan
  • 4 cups of milk
  • 0.5 cup granulated sugar
  • 0.5 tsp coarse salt
  • 2 large eggs + 6 yolks
  • 1 tsp vanilla extract
  • 2 apples, peeled and diced
  • 0.5 cups dark chocolate granules
  • Powdered sugar and whipped cream, for serving

Preparation:

  1. Preheat oven to 120°C (250°F). Place the bread on a baking sheet and bake until crisp, about 30 minutes; let cool. Meanwhile, grease a 22x32cm (9x13in) baking dish.
  2. In a medium saucepan, combine the milk, sugar, and salt and heat over medium heat, stirring occasionally to dissolve the sugar. Remove from heat and let cool slightly. Whisk the eggs, yolks, and vanilla in a large bowl. Pour the warm milk mixture into the eggs, whisking constantly.
  3. In a large bowl, combine the bread with the apples and chocolate chips, then transfer to the prepared baking dish. Pour the custard over the bread mixture and gently press the bread into the custard. Spread 2 tablespoons of butter over the entire surface. Cover with foil and let rest for 30 minutes.
  4. Increase the oven temperature to 350°F (175°C). Bake the bread pudding, covered with foil, until a knife inserted into the center comes out clean, about 45 minutes. Uncover and continue baking until the top is golden brown, about 15 more minutes. Let cool slightly, dust with powdered sugar, and serve with whipped cream.
