Ingredients:
- 0.5 cups premium flour
- 1/4 cup wheat germ or whole wheat flour
- 0.5 tsp salt
- 1/4 teaspoon of baking soda
- 2 ripe bananas
- 0.5 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup plain yogurt (not Greek)
- 0.5 tsp vanilla extract
- 1 large egg
- 1 - 2 tbsp turbinado sugar, optional
Preparation:
- In a medium bowl, whisk together the flours, salt, and baking soda. In a separate medium bowl, mash the bananas until smooth. Add the granulated sugar, oil, yogurt, vanilla, and egg to the bananas and whisk until smooth. Sift the dry ingredients over the wet ingredients and fold in with a spatula.
- Place the dough in an 7-inch (18.5 cm) round convection oven dish, a metal cake pan, or a foil-lined baking sheet and smooth the surface. Sprinkle the surface with turbinado sugar, if using, for a crispier sugar topping.
- Place the pan in a 5.3-quart (155°C) air fryer and bake at 300°F (155°C), rotating the pan halfway through, until a toothpick inserted into the center of the loaf comes out clean, 30-35 minutes. Transfer the pan to a wire rack to cool for 10 minutes. Then remove the loaf from the pan and let it cool completely on the rack. Slice and serve.
