Aperol Spritz Slush topcook.tomathouse.com
Ingredients:
- 2 cups freshly squeezed orange juice (from 4-6 oranges)
- 3 tbsp freshly squeezed lemon juice (from 1-2 lemons)
- 1/3 cup sugar
- 1/4 teaspoon coarse salt
- 2 cups orange liqueur, such as Aperol
- 1 bottle (750 ml) prosecco
Preparation:
- In a small saucepan, combine the orange and lemon juice, sugar, and salt. Heat over medium heat, do not bring to a boil, stirring occasionally with a wooden spoon to dissolve the sugar. Once the sugar has dissolved, remove from the heat and stir in the liqueur. Set aside to cool completely.
- Pour into an 8 x 8 inch baking dish and freeze until completely set, at least 4 hours or overnight.
- Scrape the surface of the frozen mixture with a fork and spoon 0.5 cups of slush into glasses, topping each with prosecco.
