Ingredients:
Beans
- 0.9 kg green beans, ends trimmed
- 1/4 cup garlic oil, see recipe below
- 2 tbsp red chili paste
- 1 tbsp. honey
Garlic oil
- 0.5 cups extra-virgin olive oil
- 2 cloves garlic, crushed
Preparation:
- Preheat oven to grill mode.
- Bring a large saucepan of water to a boil and season generously with salt. Prepare an ice bath in a large bowl. Blanch the green beans in boiling water until tender but still crisp, about 2 minutes. Drain and immediately transfer the beans to the ice bath. Drain the beans and pat dry thoroughly.
- In a large bowl, combine the garlic oil, chili paste, honey, and salt to taste. Add the green beans and toss to coat. Transfer to 2 baking sheets and broil until the beans are golden brown, 5 to 7 minutes. Serve immediately.
- Garlic oil:
Combine olive oil and garlic in a small saucepan. Heat over medium-low heat and gently fry the garlic for 5 minutes; don't let the oil get too hot, or the garlic will burn. Remove from heat and cool completely. Once the garlic oil has cooled, remove the garlic. Exit: 0.5 tbsp.
