Melted Chile con Queso

Ingredients:

  • 450 g chilled spicy breakfast sausages (pork)
  • 1 onion, diced
  • 900 g processed cheese, such as Velveeta
  • 1 can (280 g) chopped tomatoes with green chilies
  • 2 cans chopped chili peppers
  • 1 jalapeño, diced
  • Chips, for serving

Preparation:

  1. Brown the sausage and onion in a large nonstick skillet, breaking up the meat with a spoon. Once browned, drain off some of the fat.
  2. Cut the processed cheese into cubes and add it to the pan along with the chopped tomatoes and green chili with all the juices.
  3. Simmer over low heat, stirring until smooth. Then add the diced jalapeño. Serve with chips.
