Orzo pasta with cheese topcook.tomathouse.com
Ingredients:
- 2 cups orzo pasta (can be substituted with enriched rice)
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- Half a small onion, chopped
- 2 cloves garlic, chopped
- 2 cans of chicken or vegetable broth (400g each)
- 0.5 tbsp. grated Parmesan or Romano cheese
Preparation:
- Heat an 8-inch (20 cm) saucepan with a tight-fitting lid over medium heat. Add the olive oil, onion, and garlic and sauté for 2-3 minutes. Add the broth and bring to a boil.
- Add the orzo pasta and bring the broth to a boil. Cover and reduce the heat. Simmer for 15 minutes, stirring occasionally, or until the liquid is absorbed and the pasta is tender. Remove the lid and stir in the cheese. Season with salt and pepper to taste. You can also stir in any fresh herbs for an even better flavor.
