Marinara sauce for pasta topcook.tomathouse.com
Ingredients:
- 1 tbsp. l. olive oil
- 1 cup chopped onion (1 pc.)
- 1.5 tsp chopped garlic
- 0.5 cups of quality red wine, such as Chianti
- 1 can (800 g) of canned crushed tomatoes, or plum tomatoes in puree, chopped
- 1 tbsp chopped fresh parsley
- 1.5 tsp coarse salt
- 0.5 tsp freshly ground black pepper
Preparation:
- Heat the olive oil in a large 12-inch skillet. Add the onion and cook over medium heat until translucent, 5-10 minutes. Add the garlic and cook for another minute.
- Add the wine and cook over high heat, scraping up any browned bits from the bottom of the pan, until almost all the liquid has evaporated, about 3 minutes. Add the tomatoes, parsley, and salt and black pepper to taste. Cover and simmer over very low heat for 15 minutes.
