Ingredients:
Salad
- 1/3 cantaloupe, cut into 2cm pieces (about 2 cups)
- 1 package (450 g) strawberries, cut into 4 pieces (about 3 cups)
- 5 medium kiwis, peeled and cut into 2cm pieces (about 2 1/2 cups)
Refueling
- 3 tablespoons of honey
- 3 tablespoons freshly squeezed lime juice
- 1 teaspoon lime zest
- 3 tbsp finely chopped fresh mint leaves
Preparation:
- Place all the fruit in a large bowl. In a small bowl, combine the honey, lime juice, zest, and mint. Just before serving, drizzle the dressing over the fruit and toss gently.
