Ingredients:

    Cowboy Fruit Salad

  • 1 cup strawberries, hulled and halved
  • 1 cup diced honeydew melon
  • 1 cup seedless white grapes, halved lengthwise
  • 1 cup seedless red grapes, halved lengthwise
  • 1/4 cup fresh mint leaves, chopped

    Hot syrup

  • 1/4 cup sugar
  • 1 jalapeño, halved lengthwise and seeded
  • Zest and juice of half a lime

Preparation:

  1. Hot syrup:

    Combine the sugar, jalapeño, and 1/2 cup water in a saucepan and bring to a boil, stirring constantly, until the sugar dissolves. Reduce the heat and simmer until the syrup thickens, about 10 minutes. Remove the jalapeño from the syrup. Let it cool, then stir in the lime zest and juice.
  2. Cowboy Fruit Salad:

    Combine the strawberries, melon, and grapes in a bowl. Pour the syrup over the fruit and toss to combine. Sprinkle with mint leaves.
