Grilled corn with kimchi mayo and green onions

Ingredients:

  • 8 ears of corn, husked
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tablespoons kimchi brine
  • 1 tbsp soy sauce
  • 2 tablespoons of vegetable oil
  • 8 green onions, thinly sliced

Preparation:

  1. Preheat grill to medium-high heat.
  2. In a small bowl, combine mayonnaise, sour cream, kimchi brine and soy sauce.
  3. Rub the corn with vegetable oil and sprinkle with salt and black pepper. Grill the corn, turning occasionally, until cooked through and charred, 8-10 minutes. Remove from heat, spread with kimchi mayonnaise, and sprinkle with green onions.
