Ingredients:
- 700 g of young red potatoes (medium tubers) with skin, wash with a brush
- 2 tablespoons unsalted butter, melted
- 1 teaspoon coarse salt + more to taste
- 1 tbsp. minced garlic
- 1 tbsp finely chopped parsley
Preparation:
- Preheat oven to 190°C.
- Halve the potatoes lengthwise and cut into 2.5 cm (1 in) wide wedges. In a medium bowl, toss the potatoes with melted butter and 1 teaspoon of salt. Arrange the potatoes on a baking sheet large enough to accommodate the wedges in a single layer. Place the potatoes cut-side down to ensure crisp edges.
- Bake the potatoes until golden brown, about 45 minutes. Add the garlic and stir to coat evenly. Continue baking until the potatoes and garlic are evenly browned, about 15 more minutes. Watch the garlic carefully to prevent burning. Remove from the oven and toss with the parsley. Season with salt and pepper to taste. Serve.
