Pork cutlets on the bone with fried rice on a baking sheet topcook.tomathouse.com
Ingredients:
- 4 natural pork chops on the bone
- 4 tablespoons butter
- 1 cup long-grain white rice
- 1 can (280 ml) beef broth, plus more as needed
- 4 onion slices, separated into rings
- 1/4 tsp black pepper
Preparation:
- Preheat oven to 175°C.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and cook until light brown, about 5 minutes.
- Place the rice in a 22 x 32 x 5 cm baking dish. Sprinkle the pork cutlets with salt and place them on top of the rice. Pour in the broth and 2/3 cup of water. Top the cutlets with onion rings and season with black pepper. Cover the dish with foil and bake until the pork is tender, about 45 minutes.
- Turn the oven to grill mode, add a little more broth if the rice is dry, and return the pan to the oven for a couple of minutes to brown the pork.
