Soft polenta with mascarpone

Ingredients:

  • 2 cups polenta
  • 90 g unsalted butter
  • Half a small onion, chopped
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 1/4 tbsp. mascarpone cheese
  • 1/4 tbsp. grated parmesan
  • Chopped fresh parsley, for serving

Preparation:

  1. In a large saucepan over medium heat, melt 2 tablespoons of butter. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Add the chicken broth and bring to a simmer.
  2. Gradually stir in the polenta. Reduce heat to low and simmer, stirring frequently, until the polenta thickens, about 2 hours (adjust the consistency with water or broth if necessary).
  3. Remove from heat and stir in the mascarpone cheese, Parmesan, and the remaining 4 tablespoons butter. Season with salt and pepper to taste and sprinkle with parsley.
