Deep-fried pickles

Ingredients:

  • 1 jar whole pickles, cut into sticks
  • 1 cup of milk
  • 1 egg
  • A pinch of cayenne pepper
  • A little brine
  • 1 cup corn flour
  • 1 cup premium flour
  • 0.5 tsp smoked paprika
  • 1 teaspoon of salt
  • 0.5 tsp freshly ground black pepper
  • 2 tsp finely chopped dill
  • Peanut oil for frying

Preparation:

  1. Heat oil in a deep fryer to 190°C.
  2. In an 8x8 inch baking dish, combine the milk, egg, cayenne pepper, and a splash of brine. In another baking dish, combine the cornflour, wheat flour, paprika, salt, black pepper, and dill.
  3. Dry the pickles thoroughly with paper towels. Dip them first in the liquid mixture, then roll them in the flour mixture. Carefully drop the pickles, a few at a time, into the deep fryer and fry until golden brown, about 1.5-2 minutes.
  4. Transfer to a baking sheet lined with paper towels and season immediately with salt.
