Thai chicken wraps in lettuce leaves

Ingredients:

  • 450 g of minced chicken
  • 1 tbsp. vegetable oil
  • 1 cup Thai sweet and hot sauce
  • 12 large Boston lettuce leaves (about 2 bunches)
  • 1/4 cup chopped roasted peanuts
  • Half a small red onion, thinly sliced
  • 1 jalapeño, seeded and thinly sliced
  • Rice, for serving

Preparation:

  1. Heat vegetable oil in a nonstick skillet over medium-high heat until hot but not smoking. Add the ground chicken and cook, breaking up any lumps with a wooden spoon, until no pink remains, about 5 minutes.
  2. Reduce heat to medium-low and add the Thai sweet and hot sauce. Bring to a simmer and simmer until the chicken is cooked through, about 3 minutes.
  3. Spread the sauced meat over lettuce leaves and sprinkle with peanuts, red onion, and jalapeño. Serve with rice.
