Caesar Salad with Watercress

Ingredients:

  • 1 clove garlic, crushed
  • 1 tbsp. mayonnaise
  • 1 tsp anchovy paste (optional)
  • 0.5 tsp Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup + 2 tbsp grated Parmesan
  • 340 g watercress (3 bags of 110 g), tough stems trimmed
  • 0.5 cups roasted unsalted almonds, chopped

Preparation:

  1. In the bottom of a large salad bowl, mash the garlic with 0.5 teaspoon of salt using a fork. Add the mayonnaise, anchovy paste, and mustard.
  2. Add lemon juice, then olive oil. Stir in 2 tablespoons of Parmesan cheese, and season with salt and pepper to taste.
  3. Add the watercress to the bowl and toss to coat with the dressing.
  4. Sprinkle with almonds and the remaining 1/4 cup Parmesan.
