Basic Cornbread Recipe

Ingredients:

  • 7 tablespoons unsalted butter, melted, plus extra for greasing the pan
  • 1 cup yellow cornmeal
  • 1 cup premium flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1.5 tsp coarse salt
  • 0.5 tsp of soda
  • 2 large eggs
  • 1 cup of sour milk or kefir
  • 1/4 cup milk

Preparation:

  1. Preheat oven to 190°C. Grease a 22cm cast iron or other oven-safe skillet with butter.
  2. In a large bowl, combine the cornflour, wheat flour, sugar, baking powder, salt, and baking soda. In a separate large bowl, whisk together the eggs, buttermilk, milk, and melted butter until smooth.
  3. Combine the flour mixture with the liquid mixture and pour the batter into the prepared pan; smooth the surface.
  4. Bake until golden brown and a toothpick inserted into the center comes out clean, 25 to 30 minutes.
