Ingredients:
- 2 very ripe bananas
- 1 tablespoon extra-virgin coconut oil
- 3 tbsp. l. raspberry jam
Preparation:
- Peel the bananas and cut into 2.5 cm thick slices. Freeze until completely hard, preferably overnight.
- Combine the banana chunks, coconut oil, and 2 tablespoons of raspberry jam in a food processor and pulse until the bananas begin to break down. Stop, scrape down the sides of the bowl, and pulse a few times.
- Continue pulsing until mixture is smooth, like ice cream.
- For servingAdd the remaining 1 tablespoon of jam to the banana mixture. Serve immediately or freeze in an airtight container for up to 3 days.
