Mashed potatoes with herbs and goat cheese topcook.tomathouse.com
Ingredients:
- 900 g potatoes, unpeeled
- 1 cup whole milk
- 110 g unsalted butter
- 1 cup goat cheese at room temperature
- 2 tbsp chopped fresh chives
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
Preparation:
- Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pan (if desired, puree them using a vegetable grinder or potato masher). Mash the potatoes with the milk and butter using a fork or potato masher. Add the goat cheese, chives, dill, parsley, and 2 teaspoons of salt; season with pepper to taste.
