Death in the Afternoon Cocktail

Ingredients:

  • A dash of absinthe
  • 120-180 ml of quality champagne or sparkling white wine
  • 1 piece of lemon zest
  • 1 cube of sugar

Preparation:

  1. Add a splash of absinthe to a champagne flute and swirl the glass to coat the sides; drain off any excess. Pour in the champagne.
  2. Run some lemon zest around the rim and drop it into the champagne along with a sugar cube (it will fizz, so be careful not to splash).
