Frittata with ham and Swiss cheese topcook.tomathouse.com
Ingredients:
- 1 tbsp unsalted butter
- 1 shallot, diced
- 1/4 cup light cream
- 8 large eggs
- 1 cup grated Swiss cheese
- 1 cup diced ham
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives, plus extra for serving (optional)
- To serve: green salad (optional)
Preparation:
- Preheat the oven to broil. Melt the butter in a medium nonstick skillet over medium heat. Add the shallots and sprinkle with 1/4 teaspoon of salt and a few freshly ground black pepper. Cook, stirring occasionally, until the shallots are soft, about 5 minutes. Remove from heat and let cool. Set the skillet aside for the frittata.
- Meanwhile, in a medium bowl, whisk together the cream, eggs, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Add the cooled fried onions, cheese, ham, parsley, and green onions and stir to combine.
- Heat a skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the frittata is set on the bottom, about 5 minutes. Transfer the skillet to the oven and broil until the frittata is set, another 5 minutes. Remove from the oven and let rest for 5 minutes. Transfer the frittata to a large plate or cutting board. Slice, sprinkle with additional green onions, and serve warm or at room temperature with a green salad, if desired.
