Ingredients:
- 6 striploin steaks (280 g each)
- 3/4 cup olive oil
- 0.5 cup balsamic vinegar
- 1/4 cup chopped rosemary leaves
- 1 tbsp. minced garlic
- 1 tbsp freshly ground black pepper
- For servingfried eggs
Preparation:
- Preheat oven to 230°C.
- Combine olive oil, balsamic vinegar, rosemary, garlic, and black pepper. Marinate the tenderloin in this mixture for 60 minutes.
- Heat a cast iron skillet over high heat. Season the steaks with salt. Place them in the hot pan (the marinade contains enough oil, so no frying oil is needed). Cook for 2 minutes, flip, cook for 1 minute, and transfer to a baking sheet.
- Continue cooking the remaining steaks. Place the baking sheet in the oven and cook until doneness is desired. For medium-rare, bake for 9 minutes. Serve with a fried egg.
