Broccolini with peanut butter

Ingredients:

  • 2 bunches of broccolini
  • 2 tbsp. l. olive oil
  • 3 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons of honey
  • 1 tbsp. l. sesame oil
  • 2 cloves garlic, crushed
  • A pinch of red pepper flakes
  • 2 tbsp chopped peanuts
  • Sriracha sauce, for serving
  • 1/4 cup fresh cilantro, coarsely chopped
  • Lime wedges for serving

Preparation:

  1. Preheat oven to 200°C. Place the broccolini on a baking sheet and drizzle with olive oil. Bake until tender, about 15 minutes.
  2. Meanwhile, in a small bowl, combine peanut butter, soy sauce, honey, sesame oil, garlic, and red pepper flakes and mix until smooth.
  3. Transfer the broccolini to a serving platter and drizzle with the sauce. Sprinkle with chopped peanuts, cilantro, and Sriracha sauce. Serve with lime wedges.
