Ingredients:
- 1.5 cups canned sweet potatoes or 2-3 baked tubers, peeled and pressed through a puree press
- 3/4 cup sugar
- 2 large eggs
- 4 tbsp (55 g) softened butter
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- A pinch of salt
- 1 base for a pie with a diameter of 22 cm, homemade or store-bought
Preparation:
- Preheat oven to 150°C.
- In the bowl of a stand mixer, combine the sweet potato with 1/2 cup sugar, then add the eggs, butter, milk, vanilla extract, cinnamon, nutmeg, and salt. Beat until smooth. Pour the filling into the pie crust and sprinkle with the remaining 1/4 cup sugar. Let the pie stand for 15 minutes before baking to allow the sugar to melt.
- Bake until a toothpick inserted into the center of the filling comes out clean, about 1 hour. Let cool completely and serve.
