Kofta with tomatoes on one baking sheet topcook.tomathouse.com
Ingredients:
- 2 large yellow onions
- 450 g of ground lamb or beef
- 1 teaspoon turmeric
- 1 teaspoon sumac
- 1 cup chopped fresh cilantro
- 4 plum tomatoes
Preparation:
- Preheat oven to 200°C. Line a baking sheet with foil and spray with cooking spray.
- Grate 1 onion coarsely into a large bowl. Add the ground meat, turmeric, sumac, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix thoroughly with your hands or a spoon. Add the cilantro and mix again.
- Wet your hands with water (to prevent the meat mixture from sticking to your palms), divide the mixture into 8 portions, and form into oval patties. Place the patties on the prepared baking sheet.
- Quarter the tomatoes and chop the remaining onion into large pieces. Place both on the baking sheet between the patties. Season with salt and pepper. Bake until the kofta is cooked through and the vegetables are tender, about 20 minutes. Turn the oven to broil and cook until the vegetables are lightly charred in spots and the kofta is golden brown, 2-3 minutes.
