Chia pudding with rose and cardamom

Ingredients:

  • 2.5 cups plant-based milk, such as almond or coconut milk, plus more as needed
  • 0.5 cup chia seeds
  • 1/3 cup honey + more to taste
  • 2 tablespoons rose water
  • 1 teaspoon ground cardamom

Preparation:

  1. In a medium bowl, whisk together the milk, chia seeds, honey, rose water, and cardamom until the honey dissolves, about 30 seconds. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  2. Before serving, check the consistency of the chia pudding and taste it. If it's too thick, add more non-dairy milk, 1/4 cup at a time, until you reach the desired consistency. Add more honey if the pudding isn't sweet enough. Divide into 4-6 bowls or glasses and serve cold.
