Ingredients:
- 2.3 kg red potatoes, peeled and cut into 1 cm cubes.
- 2 tsp salt + more to taste
- 4 hard-boiled eggs, diced
- 3/4 cup mayonnaise
- 0.5 cups of sweet pickled cucumbers
- Black pepper to taste
Preparation:
- Place the potatoes in a medium saucepan. Add salt and enough water to cover the potatoes. Cook until tender when pricking with a knife but still holding their shape (do not overcook), about 30 minutes.
- Drain the potatoes, transfer them to a large bowl, and let them cool completely. Add the hard-boiled eggs, mayonnaise, and relish and mix gently to distribute the ingredients evenly. Season with salt and pepper to taste. Refrigerate until ready to serve.
