Cornflake French Toast with Bananas

Ingredients:

  • 3 tablespoons unsalted butter
  • 2 thinly sliced ​​bananas
  • 2/3 tbsp. maple syrup
  • 3 large eggs
  • 1 cup whole milk
  • 3 tablespoons of sugar
  • 3 cups cornflakes, crushed
  • 4 thick square slices of white bread, cut in half diagonally

Preparation:

  1. Preheat oven to 190°C.
  2. Banana syrup:

    Combine 1 tablespoon butter, bananas, and maple syrup in a small saucepan and bring to a simmer over medium heat; keep warm.
  3. Whisk the eggs with the milk and sugar in a shallow bowl. Place the crushed cornflakes in another shallow bowl. Toss the bread in the egg mixture, turning once, for about 45 seconds to prevent it from becoming too soggy. Drain off any excess egg mixture, then roll the bread in the cornflakes, pressing gently to adhere. Set aside.
  4. In a large nonstick skillet, melt 1 tablespoon of butter over medium heat. Add half the bread and fry until golden brown, about 3 minutes per side. Transfer to a baking sheet. Add the remaining 1 tablespoon of butter to the skillet and fry the remaining bread. Transfer to the oven and bake until set, about 10 minutes. Drizzle with banana syrup.
