Cucumber Raita: An Indian Cucumber and Yogurt Snack

Ingredients:

  • 2 cups plain yogurt (any fat content)
  • 2 tbsp. grated cucumber (unpeeled)
  • 1 clove garlic, minced
  • 4 sprigs of fresh mint, leaves only, finely chopped
  • 1 teaspoon coarse salt
  • 2 tablespoons golden raisins

Preparation:

  1. Stir the yogurt until smooth. Add the remaining ingredients, along with a little freshly ground black pepper, if desired. Stir, let sit in the refrigerator, and serve.
