Carrot cake flavored granola

Ingredients:

  • 4 tbsp unsalted butter, melted
  • 3 tablespoons light brown sugar
  • 3 tablespoons maple syrup
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.5 tsp coarse salt
  • 1 and 3/4 cups rolled oats
  • 2 large carrots, grate and squeeze out the juice
  • 1 cup chopped walnuts
  • 0.5 cup yogurt-glazed raisins
  • 1/3 cup chopped dried pineapple

Preparation:

  1. Position the oven rack on the middle shelf and preheat the oven to 160°C.
  2. In a large bowl, combine the butter, brown sugar, maple syrup, vanilla extract, cinnamon, and salt. Add the oats, carrots, and walnuts and stir to evenly distribute the ingredients. Spread the granola on a rimmed baking sheet.
  3. Bake the oat mixture until golden brown, 30-35 minutes, stirring halfway through. Let cool completely on the baking sheet. Stir in the raisins and dried pineapple. Granola can be stored in an airtight container at room temperature for up to 5 days..
