Asian Chicken Dumpling Soup topcook.tomathouse.com
Ingredients:
- 1 tbsp. vegetable oil
- 2 tbsp chopped ginger
- 2 cloves garlic, thinly sliced
- 2 green onions, thinly sliced, plus extra for serving
- 2 stalks celery, thinly sliced
- 4 cups lightly salted chicken broth
- 8 frozen dumplings or 16 frozen mini wontons
- 2 small bunches of bok choy, leaves chopped
- 1 cup shredded grilled chicken
- 1 teaspoon soy sauce
- Sesame oil, to drizzle
Preparation:
- Heat vegetable oil in a large saucepan over medium-high heat. Add ginger, garlic, green onions, and celery and cook, stirring, until the vegetables soften, about 3 minutes. Add chicken broth and 2 cups water, bring to a boil, and cook until the vegetables are tender, about 5 minutes.
- Add frozen dumplings or wontons, bok choy, chicken, and soy sauce and simmer until heated through, 3 to 5 minutes; season with salt to taste. Ladle the soup into 4 bowls, then drizzle with sesame oil and sprinkle with green onions.
