Chocolate chip cookies with marshmallow topping

Ingredients:

  • 110g unsalted butter, melted, plus extra for greasing the pan
  • 3/4 cup dark brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 and 1/4 cups premium flour
  • 3/4 tsp baking soda
  • 1 teaspoon fine salt
  • 3 tbsp. semi-sweet chocolate granules
  • 4 cups mini marshmallows

Preparation:

  1. Preheat oven to 190°C. Lightly grease a 22x32 cm loaf tin with butter.
  2. In a large bowl, combine the butter, brown sugar, granulated sugar, eggs, and vanilla and beat until smooth. In a medium bowl, combine the flour, baking soda, and salt. Fold the flour mixture into the butter mixture and knead into a dough. Stir in 2 cups of chocolate chips.
  3. Pour the batter into the prepared pan. Bake until the edges are golden brown and set, about 45 minutes. Let cool completely.
  4. Preheat oven to broil. Sprinkle the cookies with marshmallows and the remaining 1 cup chocolate chips. Grill, at least 8 inches from the broiler, until the marshmallows are golden brown, about 2 minutes. Watch carefully to ensure the marshmallows are toasted but not burnt. Let cool and slice with a sharp knife.
