A strong, creamy cocktail with strawberries and rhubarb

Ingredients:

  • 1 cup chopped fresh rhubarb (about 1 small stalk)
  • 1/4 cup sugar
  • 2 tsp freshly squeezed lemon juice
  • 5 frozen strawberries
  • 1/4 cup vanilla ice cream
  • 30 ml vanilla vodka
  • 1 teaspoon cognac or brandy
  • For decoration: fresh strawberries or thin strips of red rhubarb

Preparation:

  1. Combine the rhubarb, sugar, and lemon juice in a small bowl. Set aside to allow the rhubarb to release its juices and soften, about 1 hour.
  2. Blend the rhubarb with frozen strawberries, ice cream, vodka, and cognac until smooth and pink. Pour into a chilled brandy or parfait glass. Garnish with strawberries or rhubarb sticks. Serve with a thick straw or ice cream scoop. Enjoy!
