Ingredients:
Sausages in dough
- 0.5 cups flour
- 1/3 cup corn flour
- 1 teaspoon of sugar
- 1/4 tsp paprika
- 1 large egg, lightly beaten
- 1/4 cup milk
- Vegetable oil, for deep-frying
- 18 cocktail sausages
- 5-6 cups frozen curly fries, thawed slightly (about 1 pound)
Dip sauce
- 1 tbsp Sriracha sauce (hot Asian chili sauce)
- Juice of half a lime
- 1/4 cup mayonnaise
Preparation:
- Make sausages in dough:
In a large bowl, combine the flour, cornmeal, sugar, and paprika. Add the egg and milk and whisk until a thick batter forms, adding more milk if the batter is too dry. Season with 1/4 teaspoon salt and pepper to taste.
- In a large saucepan, heat about 2 inches of vegetable oil over medium-high heat until it reaches 375°F (190°C) on a deep-fry thermometer. Dip the sausages in the batter, then carefully wrap each sausage in a spiral of French fries. If desired, thread the sausages onto wooden skewers and then wrap them in French fries.
- Fry the sausages in hot oil, a few at a time, turning, until golden brown on all sides, 3-4 minutes. Transfer with a slotted spoon to paper towels to drain excess fat; sprinkle with salt.
- Meanwhile, prepare the sauce.:
Combine Sriracha sauce, lime juice, and mayonnaise in a bowl. Serve with sausage rolls.
