Grilled Salad with Bacon and Blue Cheese topcook.tomathouse.com
Ingredients:
- 170 g bacon, cut into pieces
- 1/3 cup crumbled blue cheese
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tbsp. freshly squeezed lemon juice
- 2 romaine lettuce hearts, halved
Preparation:
- Preheat grill or grill pan over medium-high heat, about 15 minutes.
- Cook the bacon until crispy, about 8 minutes. Transfer the cooked bacon to a paper towel-lined plate, reserving the rendered fat in the pan.
- Meanwhile, in a small bowl, combine blue cheese, mayonnaise, sour cream, lemon juice, 1/4 teaspoon salt and a couple of grinds of black pepper.
- Brush the romaine lettuce hearts with the rendered bacon fat and grill until blackened, about 2 minutes. Serve drizzled with the dressing and sprinkled with bacon.
