Ingredients:
Lemon-mint syrup
- 1 cup of sugar
- Strips of zest from half a lemon
- 2 tablespoons fresh mint leaves
Blueberry layer
- 4 cups blueberries
- 2 tablespoons lemon juice
- 2 tbsp bourbon
Lemon Julep
- 0.5 cup lemon juice
- 1 tbsp bourbon
Preparation:
- Lemon-mint syrup:
Combine sugar and 1 cup water in a small saucepan. Bring to a boil over medium heat. Turn off the heat and add the lemon zest and mint. Let the syrup cool completely.
- Blueberry layer:
Combine blueberries, 6 tablespoons lemon-mint syrup, and lemon juice in a blender. Blend until smooth. Transfer to a 2-cup liquid measuring cup. Add bourbon and set aside.
- Lemon Julep:
In a 2-cup liquid measuring cup, combine 1/2 cup water, lemon juice, 1/3 cup lemon-mint syrup, and bourbon. Stir and set aside. Spoon 1/2 cup blueberry puree into popsicle molds, filling each mold halfway. Freeze for 1 hour.
- Once the blueberry layer has set, add 1/2 cup lemon julep to each mold. Let set in the freezer for about 1 hour. Carefully remove the popsicles from the mold and serve.
