Ingredients:
Apple donuts
- 3/4 tbsp. vanilla protein powder
- 2/3 cup oat flour
- 1/4 cup coconut flour
- 4 teaspoons apple pie spice
- 2 tsp baking powder
- 0.5 cup coconut sugar
- 2/3 cup unsweetened applesauce
- 0.5 cups non-alcoholic apple cider
- 4 large eggs
- 2 tbsp coconut oil, melted
- Cooking spray to spray donut pans
- Special equipment: 2 non-stick donut pans with 6 compartments
Maple syrup glaze
- 1/3 tbsp. maple syrup
- 6 tbsp. l. vanilla protein powder
Coconut glaze
- 6 tbsp. l. vanilla protein powder
- 1/4 tbsp. maple syrup
- 1/4 cup coconut milk at room temperature
- 1/4 cup coconut flakes
Coconut sugar
- 0.5 cups coconut oil, melted
- 0.5 cup coconut sugar
Preparation:
- Preheat oven to 160°C.
- In a large bowl, combine the protein powder, oat flour, coconut flour, apple pie spice, and baking powder. Add the coconut sugar and mix well.
- In a medium bowl, combine the applesauce, apple cider, and eggs. Pour the liquid mixture into the flour mixture and mix until smooth. Stir in the coconut oil.
- Spray two donut pans with cooking spray. Spoon the batter evenly into 12 cups. Bake, rotating the pans halfway through, until the donuts are light golden brown, about 15 minutes. Transfer the donuts to a wire rack to cool for about 15 minutes.
- Serve as is or drizzle with maple syrup glaze, coconut glaze, or sprinkle with coconut sugar.
Maple syrup glaze:
Combine maple syrup and protein powder in a shallow bowl. Dip one side of a donut into the glaze or spoon it on.
Coconut glaze:
Combine the protein powder, maple syrup, and coconut milk in a wide, shallow bowl. Dip one side of each donut into the glaze. Sprinkle with coconut flakes. The glaze will thicken as it sets. Thin with water if necessary.
Coconut sugar:
Place coconut oil in a wide, shallow bowl and coconut sugar on a plate. Dip one side of each donut into the coconut oil, then press the same side into the coconut sugar.
