Ingredients:
Ribs
- 3/4 cup brown sugar
- 2 tbsp paprika
- 2 tablespoons coarse salt
- 2 tsp cayenne pepper
- 2 tsp freshly ground black pepper
- 2 cloves garlic, crushed
- Juice of 2 oranges
- 2 layers of pork ribs (from the loin), cut into pieces with 2 bones
Relish (fruit and vegetable caviar)
- 1.5 cups fresh pineapple, diced
- 1/4 cup chopped fresh cilantro
- 1 tbsp. honey
- 0.5 tsp chili powder
- A pinch of coarse salt
- 1 jalapeño, seeded and diced
- 1 small red onion, diced
- Zest and juice of 1 lime
Preparation:
- Preheat oven to 160°C.
- Ribs:
In a large bowl, combine brown sugar, paprika, salt, cayenne pepper, black pepper, garlic, and orange juice. Add the pork ribs and toss to coat.
- Cut a sheet of aluminum foil 18 inches wide and 24 inches long and place it on a baking sheet. Place the ribs on the foil along with any juices from the bowl. Wrap the ribs tightly in the foil. Bake until very tender, about 2 hours.
- Relish:
Meanwhile, in a medium bowl, combine the pineapple, cilantro, honey, chili powder, salt, jalapeño, red onion, lime zest and juice and toss to combine. Set aside.
- Remove the ribs from the oven and set the oven to broil. Carefully unwrap the foil. Arrange the ribs, meaty side up, under the broiler. Grill for about 5 minutes. Transfer the ribs to a platter or board, top with cold pineapple sauce, and serve.
