Healthy Rice Krispie Bars with Almonds and Strawberries

Ingredients:

  • 3 tablespoons unsalted butter
  • 2 cups mini marshmallows
  • A pinch of coarse salt
  • 1/4 cup almond paste
  • 0.5 tsp vanilla extract
  • 4 cups rice flakes (breakfast cereal)
  • 1 and 1/4 cups freeze-dried strawberries (about 20 g), chopped
  • 0.5 tbsp. white chocolate granules

Preparation:

  1. Spray an 8-inch square baking pan and a wooden spoon with cooking spray.
  2. In a medium saucepan over medium heat, melt the butter. Add the marshmallows and salt and stir with a prepared spoon until the marshmallows are completely melted, about 2 minutes. Stir in the almond paste and vanilla.
  3. Add the oats and strawberries and stir. Remove from heat and let cool slightly for a few minutes. Stir in the white chocolate chips. They will melt slightly. Try spraying your hands with cooking spray before placing the dessert into the pan to prevent it from sticking..
