Apple granita with mint

Ingredients:

  • 0.5 cups of sugar
  • 1 cup fresh mint, tightly packed
  • 1 large Granny Smith apple
  • Juice of 2 limes

Preparation:

  1. Combine sugar and 2 cups of water in a small saucepan and bring to a boil over medium heat. Cook, stirring, until the sugar dissolves, about 4 minutes. Transfer to a blender and let cool completely.
  2. Add the mint to a blender and blend until smooth. Strain through a fine-mesh sieve into a 20cm square stainless steel or glass baking dish. Finely grate the apple peel into the dish (you won't need the rest of the apple), then add the lime juice.
  3. Freeze until ice crystals begin to form around the edges, about 45 minutes. Use a fork to scrape the crystals toward the center of the pan, then continue freezing, scraping the ice every 30 minutes, until the granita is set, about 4 hours.

    Avoid using aluminum cookware. It can react with acidic ingredients, imparting a metallic taste to the dessert. Use stainless steel or glass.
